3 Midweek Tea Ideas For Busy Parents

When you’ve been running about all day, the last thing you want to do is to be slaving away in the kitchen! Well, don’t despair, as we’ve got your back with three super quick and easy recipe ideas, using our delicious seafood range. Teatime heroes to the rescue!

 

 

Mild Fish Tacos 

 

Arriba! Spice things up with a classic Mexican dish. We know the little ones aren’t usually fans of the heat, so this recipe is in fact pretty mild. Fish tacos are ideal for those warm summer evenings when you fancy a light bite to eat! Below we list the basics, but be sure to pimp yours up and create your own unique taco-tastic creation!

 

What you will need:

 

  • Whitby Seafoods Lemon and Pepper Fish Goujons (Available from ASDA)
  • Taco shells
  • Lettuce
  • Onion
  • Salsa
  • Juice of a lemon

 

 

Breaded Fish Wraps

 

That’s a wrap! Tea times needn’t be complicated with this simple breaded cod recipe. All it requires is a little bit of chopping, and some grating and you’re all set. 

 

What you will need:

 

  • Whitby Seafoods Chilled Fish Goujons (Available at Sainsbury's)
  • Tortilla wraps
  • Lettuce
  • Avocado 
  • Soured cream
  • Grated cheese 

 

Method:

 

Bake your succulent cod goujons as per the packet instructions until crisp and golden. 

 

Whilst you wait, peel and chop the avocado then using the back of a fork smash into a think paste. 

 

Smother your smashed avo onto a lightly toasted tortilla wrap and layer with cool shredded lettuce. Once the goujons are cooked to perfection drop them onto the bed of lettuce, add a dollop of soured cream and sprinkle with grated cheese! 

 

Then call the kids to the table and give yourself a pat on the back. 

 

We love a bit of avocado, and think it goes beautifully with breaded fish – but of course, you can adapt your wraps to suit you and your little tinkers.

 

Cook your Whitby Lemon and Pepper Goujons as per the instructions until golden brown and cooked through. 

 

Lightly toast your taco shells under the grill and stuff with lettuce, chopped onion and plenty of other good stuff. Plonk your crispy goujons on the top with a dollop of salsa and a good squeeze of lemon. 

 

Dive in and enjoy!

 

 

Classic Scampi, Chips and Mushy Peas

 

Ok, so you caught us, this isn’t a ‘recipe’ as such, more of a serving suggestion! But what’s more quintessentially British than a seaside classic of scampi, chips and mushy peas? It’s bound to be a crowd-pleaser and takes next to no time to prepare – perfect for those nights where you need a quick and easy tea! 

 

What you will need:

 

  • Whitby Seafoods Scampi Bites (Available in Tesco)
  • Potatoes (or chips, we won’t judge!)
  • Mushy peas (or baked beans for picky eaters)
  • Tartare sauce (or ketchup)

 

Oven cook your Whitby scampi bites and chips as per the instructions and enjoy the scents of the seaside in your own kitchen.

 

Of course, you can use shop-bought mushy peas but don’t feel you need to as they couldn’t be easier to make.

 

Simply boil your frozen peas for three minutes or until cooked through. Drain and place in a large bowl. Add a little butter and using a potato masher mush those peas to a consistency you’re happy with. Add a little seasoning for flavour and voila homemade mushy peas perfect for hungry tums!
